Meatball Ratatouille

Made in a 3 quart casserole dish.

Ingredients:

2 large sweet potatoes, sliced into 1/2 inch slices

3 large tomatoes, sliced into 1/2 inch slices

1 large eggplant, sliced into 1/2 inch slices

1 large red onion, sliced into 1/2 inch slices


For meat mixture:

1.5 pounds of ground beef

1 teaspoon Pereg garlic powder

1 teaspoon Pereg onion powder

1 teaspoon Pereg white pepper

1 teaspoon Pereg cumin

1 teaspoon Pereg paprika

2 tablespoons Heinz ketchup, I use the simply or no sugar added

1 teaspoon Trader Joe's Umami seasoning (or consomme)

1/2 teaspoon minced ginger


For sauce:

3 cups of hot water

2 tablespoons tomato paste concentrate

2 tablespoon consomme (Osem or Spicify)

If you use the Spicify Consomme, it doesn't have salt so season to taste

Cooking spray


Preheat your oven to 375 degrees.

1. Mix all the meat ingredients together and form flat patties.

2. Arrange the veggies and meat like in the pictures.

3. Mix the sauce ingredients together and pour over the meat and veggies.

4. Spray the top with cooking spray, cover and bake for an hour.

5. Uncover and bake for an additional hour.

6. Optional, garnish with chopped parsley.
