Apple Coconut "Rice" Pudding

Ingredients:

5 apples washed, cored, and cubed (you do not have to peel)

1 13.5 oz can of coconut cream

1 tablespoon of cinnamon

1 teaspoon of vanilla extract

1/3 cup of chia seeds

1/4 cup flax seed meal (optional)

1/2 cup of raisins


Combine the apples, coconut cream, cinnamon, and vanilla in a small pot and simmer on a low heat until the apples are tender. Then use an immersion blender to create a smooth texture. Then just add in the chia seeds, flax seed meal (if you're using it) and raisins. That's it! A #whole30approved "rice" pudding. Even if you are not following Whole30, this is a delicious clean sweet treat.
