Red Lentil Soup

Red Lentil Veggie Soup
Ingredients:
⭐1 cup Bob's Red Mill red lentils
⭐4 cups water
⭐1 tbsp olive oil
⭐1 rounded tsp white miso paste
⭐1 tsp garlic powder
⭐1 tsp onion powder
⭐1/2 tsp cumin
⭐3 garlic cloves sliced
⭐Rounded tsp tomato paste
⭐half of a red bell pepper, rough chop
⭐1 onion, rough chop
⭐2 carrots, rough chop
⭐1/3 cup diced celery
⭐salt & pepper to taste
⭐1/2 cup chopped parsley
⭐ 1 tbsp Osem Chicken Powder
Directions
⭐Saute the onion and garlic in tbsp of olive oil until translucent
⭐Add carrots, celery, red bell pepper and cook for 5 min
⭐Add lentils then water
⭐Add cumin, onion powder, garlic powder
⭐Stir in tomato paste
⭐Stir in miso paste
⭐Stir in Osem powder
⭐Cover and let simmer for 30-45 min, until everything is tender
⭐Use immersion blender to blend the soup or throw into your regular blender. If you don't have a blender, chop everything smaller, cook the soup for longer, and mash with a potato masher - a little more work but same result
⭐Garnish with parsley (I like a lot, I stir it into the soup), paprika & chili powder (totally optional)
