Ukrainian Frikadelki Soup

My mom used to make this chicken meatball soup all the time and I completely forgot about it until my sister and I were talking about how we should compile a book of all our moms recipes. It made me in the mood to make it so here it is!
I started off by sauteing a handful of finely chopped carrots and 1 small onion finely chopped in a tbsp of olive oil.
In a glass bowl I mixed half a pound of ground white chicken and a handful of chopped parsley, salt & pepper and then added half of the carrot onion mixture and formed into small meatballs.
In a soup pot I added the other half of the carrot and onion mixture. I also added two rounded tbsp of Osem chicken soup powder. Then I added 6 cups of water. I brought that to a boil and then added the chicken meatballs. I forgot to add potato so I microwaved two potatoes for 4 minutes and cubed them and added it to the water. I would have added it to the pot with the carrot and onion. I simmered it all for about 30 minutes on a low heat. It came out amazing! It was my first time making it and it brought back a lot of good memories of my mom and childhood.
