Vegan Tapioca Pudding

INGREDIENTS

⅓ cup small tapioca pearls

1 cup cashew milk

1 can fat coconut milk

3 Tbsp coconut sugar

1 tbsp pure vanilla extract

pinch of salt, I used a little more than that, oops

Fresh/ frozen fruit of your choice. I used fresh mango and frozen raspberries.


INSTRUCTIONS

Soak the tapioca pearls in the 1 cup of milk for an hour. Then add all of your ingredients into your pot. Turn the heat up high until it boils and then lower it down to the lowest setting for 25 to 30 minutes. Stir it every 5 minutes or so just so the tapioca pearls don't clump up or burn. Remove it from the heat and you can eat it right away or have it warm or cold. However you want to enjoy it, do you! I like it all 3 ways :)
