Roasted Garlic Herb Potato

Ingredients:

6 red skin potatoes, washed, scrubbed and cut into wedges

8 fresh garlic cloves, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1/4 cup olive oil

Maldon sea salt flakes (to taste)


Saute the garlic cloves in the oil until the garlic is golden brown. Strain the oil into a bowl and then toss the potatoes together with the oil. Save the garlic, we will use it to top the potatoes at the end. Arrange the potatoes on a parchment lined baking sheet and bake on 400 degrees for 30 minutes, and then flip the potatoes and bake for an additional 30 minutes or until the potatoes are golden and tender. When the potatoes are done, toss them with the herbs, garlic and salt. Enjoy!
