Roasted Herb Tomatoes & Garlic

Ingredients:

2lbs of heirloom cherry tomatoes (I buy mine at Costco)

5 small cloves of garlic

1/2 teaspoon of Herbes de Provence

5 sprigs of fresh thyme

Salt and black pepper

2 tablespoons of olive oil


Mix the tomatoes, olive oil, garlic, salt, black pepper, and Herbes de Provence together. Pour into a baking dish. Nestle the fresh sprigs of thyme on top of the tomatoes in different areas of the baking dish. Bake on 350 for about an hour.
